chickpea zucchini patties
Chickpea, Zucchini, Mushroom Patties
2 Zucchinis, finely chopped
1 Cup finely chopped mushrooms
1 - 15oz can garbanzo beans
½ cup oats pulsed to make flour
2 - T chia seeds
1 - T Nutritional Yeast
1 - T finely chopped Fresh Dill
1.5 tsp All Seasonings
In a food processor, pulse oats to make oat flour. Put in a large bowl.
Add, chia seeds, nutritional yeast, dill, all seasonings.
In a separate bowl, cut zucchini, put in food processor., take out and with towel remove excess water.
Add, mushrooms, beans, zucchini to dry mixture. Mix well
Make 8 large patties, or 16 small patties.
Place on a cookie sheet, bake at 400 degrees for 45 minutes. Half way through, turn patties so they are evenly browned.
This recipe was adapted from Jeffrey Doucette. Here is his recipe. I adapted it on what I had available. It really is the best chickpea patty that I have tried.
