Paleo Banana Blueberry Muffins

Paleo Banana Blueberry Muffins
Gluten-Free, Grain-Free, Dairy-Free, Sugar- Free, Oil-Free

Ingredients

  • 2 ripe bananas , mashed
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup fresh or frozen blueberries

  • 2 1/2 cups  Almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon gluten-free baking powder
  • 1 teaspoon orange peel
  • 1/2 teaspoon cinnamon
  • 1/8 cup Monkfruit


Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl mash the bananas until they are nice a smooth.
  3. Add eggs and vanilla to banana mixture.
  4. In a separate bowl, add all dry ingredients: Almond flour, baking soda, baking powder, orange peel, cinnamon and Monkfruit.
  5. Mix dry ingredients with wet ingredients, stir with a spoon, don’t overstir.
  6. Then add blueberries, stir gently.
  7. Add to muffin tin, lined with cupcake paper liners - makes 12.
  8. Place in oven. Bake for 25 minutes. Oven times may vary.
  9. Check with a toothpick to make sure inside of muffin is done.
  10. Let cool, then eat and enjoy!
  11. These stay moist the next day, and freeze well. Store in an airtight container.
  12. Are about 150-160 calories.

Monk fruit is a small, green gourd that resembles a melon. Monk fruit extract is 150 to 200 times sweeter than sugar. The extract contains zero calories, zero carbohydrates, zero sodium, and zero fat.  Monkfruit does not impact blood sugar levels.
