Ingredients
- 2 ripe bananas , mashed
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup fresh or frozen blueberries
- 2 1/2 cups Almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon gluten-free baking powder
- 1 teaspoon orange peel
- 1/2 teaspoon cinnamon
- 1/8 cup Monkfruit
- Preheat oven to 350 degrees.
- In a large bowl mash the bananas until they are nice a smooth.
- Add eggs and vanilla to banana mixture.
- In a separate bowl, add all dry ingredients: Almond flour, baking soda, baking powder, orange peel, cinnamon and Monkfruit.
- Mix dry ingredients with wet ingredients, stir with a spoon, don’t overstir.
- Then add blueberries, stir gently.
- Add to muffin tin, lined with cupcake paper liners - makes 12.
- Place in oven. Bake for 25 minutes. Oven times may vary.
- Check with a toothpick to make sure inside of muffin is done.
- Let cool, then eat and enjoy!
- These stay moist the next day, and freeze well. Store in an airtight container.
- Are about 150-160 calories.
