Vegan Banana Muffins
NO OIL, NO SUGAR, GLUTEN FREE - VEGAN BANANA MUFFINS
Makes 12 Muffins
Preparation Time: 15-20 min
Cook Time: 20 min
Ingredients:
3-4 bananas
1 1/2 cups oats - pulsed in food processor
1/2 cup oats whole
1 Apple
2 T ground flaxseed
1 tsp ground cinnamon
1/2 tsp alcohol free vanilla extract
1/2 T apple cider vinegar
1/2 T aluminum free baking powder
1/2 tsp sodium free baking soda
Spray muffin pan, or use no stick muffin pan
Pre heat 350 degrees
Pulse/ grind oats to flour
Place oats in large bowl and add other dry ingredients
Puree bananas, apple in food processor
In mixer add wet ingredients, stir.
Add dry ingredients and mix until combined
Do not over mix
Bake for 20-22 minutes until tops are golden brown and toothpick comes out clean.
NOTES:
For a sweeter muffin add some rasberries. Add a couple to each muffin when batter is in the muffin pan.
You can add 1/8 tsp of cloves
Rather than 1 apple you can use 1/2 cup unsweetened apple juice and 1/2 cup unsweetened apple sauce.
I have tried recipe with 3 bananas and with 4 bananas added. i prefer 3. Still moist.
