vegan chickpea meatballs
INGREDIENTS
1 can chickpeas (rinsed & drained)
1 Tablespoon chopped fresh green onion
½ cup chopped mushrooms
1/2 tsp fresh minced garlic
1/4 cup oat flour
2 Tablespoons Coconut milk
1 Tablespoon dried parsley
1 tsp all seasoning salt
1 tsp nutritional yeast
Optional: Add thyme, oregano or basil
DIRECTIONS:
Bake at 375 degrees
Saute mushrooms, onions and garlic in vegetable sauce. Drain
In separate bowl combine oat flour (I put gluten free oats in a food processor and turn to flour)
Add all spices to oat flour, mix
Food process 1 can chickpeas till smooth.
Combine mushroom, onions, garlic to flour mixture
Add chickpeas to mixture
Make into balls, place on cooking pan and bake at 375 degrees for 20-30 minutes
